No one will know you have snuck sweet potato and black beans into this delicious snack! Not only does it taste amazing but the texture is perfect and they are allergy friendly! Small Talk On The Blog - Natural Harry Recipes

Makes: 13cm x 23cm slice    

Prep time: 10 minutes

Cook time: 35 minutes  

• 2 ½ cups (400g) sweet potato, peeled and diced 
• 1 can (230g) black beans, rinsed and drained 
• ¾ cup (55g) whole rolled oats 
• 1 teaspoon baking powder 
• 2 tablespoons cacao powder (or cocoa powder)
•Pinch of salt
• 1 teaspoon vanilla powder 
• ½ cup (125ml) maple syrup 
• ¾ cup (10g) freeze dried strawberries

• Pre-heat oven to 180°C/356°F fan forced. 

• Line a slice tray with baking paper. 

• Steam sweet potato until soft. 
 
• Process oats in a food processor until a flour is formed. Add the baking powder, cacao powder, salt and vanilla. Lightly pulse to combine. Add the sweet potato and black beans and blend to a smooth consistency. Stir in half of the freeze dried strawberries. 
 
• Pour into your baking paper lined tray, spreading mixture all the way to the edges and place in the oven to bake for 35 minutes. 
 
• Remove from the oven and place on a cake rack to cool for 20-30 minutes. Sprinkle with the remaining strawberries, slice and serve.
